However my psychiatrist said it would be OK to chew the 300mg ER tablet, effectively getting a higher dosage administered to help with sleep. I just take it at bedtime to sleep and was previously on 500 mg IR at bedtime

Everything I was taught or read says you can't but the main reason is that by chewing it too much of the medication is released at once. Maybe because you take it for sleep/sedation it wouldn't matter so much if it hits you all at one time.
I'd suggest you ask your pharmacist. They're specifically qualified to answer questions about medications.
