I took out my ring just yesterday morning and have not started my period yet. My boyfriend and I just had sex tonight with no ring, no condoms, nothing. I left the ring in for the correct 21 days but I'm still worried I can get pregnant because we didn't use protection and my ring is out for the 7 days. Should I take the plan B pill just in case? Or am I safe on the ring free week with no period yet?
Can I have sex the ring free week and still be protected?

Stephen is correct. As long as you use the ring correctly you are protected all the time. You do not need plan B

Yes you can. I would bet that you are safe during your ring free week. I think that taking plan B now will just create hormonal upsets for no compelling reason.
