I used Monistat1 on Sunday night & it’s day 5 today. My symptoms are completely gone & no more white discharge from ovule I inserted. I’m aware it says seven days but can I have intercourse if my symptoms are gone?

I wouldn't recommend it. You risk passing it back & forth between you & your partner. He can have no symptoms, but still pass it back to you.
You could have few symptoms but still give it to him. For the sake of 2 days, it doesn't seem worth the hassle.
Most of he time I've had a yeast infection, I've had to treat my partner, too. Otherwise we just kept having more yeast infectons.
Sugar is really bad, too, as it feeds the yeast.
Even if you have sex with a condom, you may find it irritaes your vagina, if you don't wait long enough. That's up to you.
