After I started taking it at night several hours after eating, my doctor later reduced my prescription, which seemed to indicate to me that it was being absorbed better and I didn't need as much. Is this possible or should I go back to morning dosage and see what happens?
Is it okay to take Synthroid at bedtime on an empty stomach rather than in the morning?

Yes, it's fine to take Synthroid at bedtime but on an empty stomach (at least 1 hour before food or 2 hours after food)... and try to take it at the same time each day.
