Can I drink a couple beers while taking Nitrofurantoin?

Looking at the product information it does not list any interactions with Alcohol but that does not mean they don't exist (the medication must be quite safe having been in use for over 60 years). Both Alcohol and Nitrofurantoin have hundreds of known drug interactions and as Liver issues are listed in severe side effects I'd go without the Alcohol while taking the antibiotics just to be sure. One to two weeks without a drink shouldn't be an issue if you err on the side of caution.
