Two years on 40mg Lipitor with no problems. Increased to 80 caused intestinal issues, headaches and leg cramps. Can this happen?

Yes, it can on all counts in some patients and they're common to very common.
It may be that with the lower dose your metabolism adjusted to the drug easily but now you've doubled your dose and that could definitely cause new side effects as your metabolism readjusts. You should let your doctor know because a temporary decrease in dosage may help. It may also be just a matter of time with the new dose. Side effects generally resolve within days to a week or two and you could also ask your doctor or pharmacist for a recommendation of OTC remedies at least for the diarrhea and headaches/cramps.
