Omeprazole after meal ? How is it possible?

Omeprazole act in acidic stomach.
It takes 30 minutes to 1 hour to act.
Empty stomach do not have acidic medium so Omeprazole(prodrug) or Pantoprazole is taken 30 minutes or 1 hour before meal so as to synchronise it's action with stomach acidity

As far as a dr and ordering what isn't supposed to be. That is why we depend on the pharmacy to catch mistakes. Its our safety net between the dr and us.
If I had been taking off orders and saw that, I would ask the dr did you really mean this?

It's not that big of deal. Yes, 30 minutes before a meal is ideal. But I've taken it with the meal, after the meal, or not even near a meal. If you take it daily it seems to stay in you ad when you take isn't that important. At least this has been my experience with it.

Maybe it upsets her/his stomach and after a week it will not matter because ppi's are long lasting so at that point the meds overlap and the acid pump never has a chance to start to work normally so with or without or before or after food does not matter. If you have taken a ppi for a longtime and stop suddenly you will be fine for about 3-4 days then everything will start to work again and you will pay hell till you get the acid under control again. Ppi's are not like h2 blockers (Zantac) that weaken acid . Ppi's shut the acid off
