Pronunciation: pro-lam'enz, pro'la-menz, -minz

Definition: Proteins insoluble in water or neutral salt solutions, soluble in dilute acids or alkalies, and in 50–90% alcohol; gliadin, zein, hordein; all have relatively high proline contents.
