Good question! I have a friend on it and they were wondering the same thing. Luckily I have the answer! The reason you have to take it on an empty stomach is so that it gets fully absorbed in the body. The absorption can easily be messed with if you take it other than directed and your body won't receive the proper dose. If you want to take it at night, you can also do that! If you take it in the morning, take it 30 minutes before eating anything. If you want to take it at night, make sure to take it a few hours after you've eaten. I would talk to your doctor first about doing that. Hopefully I helped!
