I think maybe you need to talk to your doctor, my husband does this same thing after he is about asleep he will jump up, he says its like his air gets cut off but after that he has to get up sit up in our recliner the rest of night. He says he feels better to sit up. He also has sleep apnea. He went to doctor explained how he felt like he panics. We have checked his oxygen level when it happens it will be good his blood pressure good heart rate good ,so the doctor first gave him medicine called buspoirn well it worked some what afew days then he went right back to panicking. Now the doctor also gave him trazadon to take one before bed along with the other med twice a day it helps. Now he can finally stay in bed out of recliner. But try to get in with doctor my husband was so miserable no sleep at times for days he thought he would shut down from his air, he was in his mind but he wasn't. Good luck I actually know what you are going through because my husband went through the same thing for about 4-5 maybe 6 months.
