The peeling starts as round spots and it's many layers of skin. Feels really crusty.

Is your hand red under the spots where the skin peels? Do they itch?
I'm not sure if this is the same thing you may have but my mom's hands get this way when she is stressed. They have been like this all of my life. Her hands wont have any peeling for months then all of a sudden, during an either stressful or upsetting time, they start to peel, get red, and itch.
Her and her PCP could never tell why this kept happening until one day she got my cousin's eczema cream on her hands during a break out and it helped.
She FINALLY went to a dermatologists and they said it had the symptoms of eczema but it was an unusual spot.
Worth a shot if the symptoms are fitting to ask you dr what he/she thinks about it being eczema.
