I take seroquel at bedtime. 6 years now. I haven't gained significant weight but after 30 mins of taking it is Get what I call the "seroquel munchies" I always get superid hungry and have fallen asleep eating. If you can, take it once a day and fight the munchie urge to maintain weight.
I have been taking Quetiapine for 7+ years. I take it at bedtime and have never had issues losing weight (when I try)

I however didn't have to try to lose the weight other than fight the sleep munchies. I just lost 10 lbs in a month by quitting lithium.
