However everything I have read says it should be taken alongside another drug such as gentamycin. Is this correct or will doxycycline cure the disease on it's own?
Brucellosis is an infectious disease caused by contact with animals carrying a bacteria called Brucella. It is often caught by drinking unpasteurised milk.
See https://www.drugs.com/enc/brucellosis.html for information on Brucellosis.
From searching the internet I agree with your findings.
Standard treatment ususally involves a tetracycline (eg doxycycline) and rifampicin combination for 2 to 8 weeks. Gentamicin or streptomycin combinations have also been used alongside a tetracycline.
If you are unhappy with your doctors decision you could seek a second opinion.
