In the Levitra directions it says grapefruit should not be eaten when taking Levitra. Why not?

This is a potential / theoretical drug interaction that has not been studied... hence the warning.

Certain chemicals that grapefruit products contain can interfere with the enzymes that break down (metabolize) Levitra in your digestive system. As a result, more medication stays in your body. This can increase the potency of Levitra to potentially dangerous levels, causing serious side effects.

It is best to avoid taking grapefruit. Check with your doctor if you have any concerns.
