Doctor - I recently started Atripla 1 week ago. directions say: take 2 hours AFTER a meal/Emply Stomach right? How long afterwards can i eat again/snack??

Atripla is usually taken once daily on an empty stomach (an hour before or 2 hours after a meal). At bedtime is probably the best as it may make some of the side effects more tolerable.
If you take it at any other time of the day (which is still fine) you should wait for at least 1 hour until you eat a meal. It would be fine to have a little snack before then but not a main meal.
Don't get too hung up on the timing - it is more important to take the tablet.
