You could have hypoglycemia and/or anemia because eating once a day is not enough. It is not healthy to eat only once a day. Your body uses those calories then has nothing to burn but your fat and/or muscle tissue. This is very hard on your body. If you want to lose weight or keep weight off, it is better to eat smaller meals several times a day rather than one bigger meal. What you are doing will shut your metabolism down making it hard to lose weight because your body thinks it is starving so it shuts down to conserve calories and you will feel really crappy.
