Go to the site "coumadin.com" It is an excellent resource for people on coumadin. It lists the amount of Vitamin K in many foods to help you keep levels consistent. Like KM says, you need Vitamin K in your diet but you must be consistent with the amount. If you never eat greens and all of a sudden asparagus goes on sale and you eat a big bowl, it is going to affect your INR. But if you eat greens of some kind each day you will be fine.They can adjust your coumadin around that. Coumadin.com has some tools like a food diary and then the list of Vitamin K containing foods that you can download and print. It is one of the best coumadin websites I've seen. Certain medications and supplements can greatly affect your INR levels when you take coumadin. There is a section that discusses this too. I recommend any coumadin patient to refer to this site and read the wealth of information. It will greatly help you and take the fear out of taking coumadin.
