All prescriptions have a date that recommends when the medication should be use by. However I have heard and read that the mediation, in most cases, is still safe and potent to use for a couple of years after that date. Is this true?

After that date their is no guarantee it will work. If you want to risk seizures because seizure meds didn't work, or a worsening infection because antibiotics are old then its up to you, but they're telling you they won't back it after that date. In a few instances there is an actual risk of harm if you use it when its old. The tetracyclines are one example.
