Any foods rich in Vitamin K will interact with your Coumadin. Some of them are Spinach, Asparagus, Kale, any dark green vegetable basically as well as Lettuce of all kinds. Greens are allowed in your diet but must be kept consistant so they can adjust your Coumadin accordingly. I have been on Coumadin for many years and will be on it for the rest of my life due to a blood clotting disorder so I have been there it is hard but it is possible to enjoy a salad once in awhile.
